Truffle Season at Bravado — Brief and Glorious

Black and white truffles from Istria have arrived in the kitchen. Here's what we're changing on the menu for the next six weeks.

At the end of May, our first shipment of black and white truffles arrives from Istria. The season is short — six weeks at most — and during that time we're updating a handful of key dishes on the menu.

What Truffles Are Changing

Our black pasta with seafood gets a fresh shaving of black truffle over the finished plate. No creamy sauces to mask the aroma — just pasta, seafood, and a thin layer of truffle.

The chicken and mushroom risotto becomes a truffle risotto — Arborio rice finished with sheep's cheese, sautéed mushrooms, and white truffle stirred in during the last thirty seconds of cooking.

Why the Season Is So Short

Fresh truffles are nothing like dried ones — they lose their aroma within seven days. So we don't keep stock. What arrives on Tuesday is gone by Sunday, and the next delivery comes the following Tuesday.

If you're after the truffle steak or a tasting menu — we recommend booking 48 hours ahead so we can set a portion aside for your table.
